Gluten Free "Oven Fried" Fish
6 - 8 oz. firm white fish
2/3 cup of gluten free Bisquick
1 egg
2 tablespoons milk
1 teaspoon dill
1/2 teaspoon old bay seasoning
salt & pepper, to taste
Olive oil, to drizzle on top
Instructions for the Fish:
- Preheat oven to 400. Rinse fish and pat them dry with paper towels.
- In a medium bowl combine the egg milk and a sprinkle of all the seasonings or other seasonings of your choice.
- In another bowl combine the gluten free Bisquick with more of the same seasonings that you used in the egg.
- Dip the fish into the seasoned dry mixture, then dip it into the egg, then back into the dry mixture. At this point you could either set it aside on a plate, or repeat the process of dipping it into the egg and dry mixture again for a thicker coating. (Add more Bisquick as needed.)
- Spray a wire rack with non-stick spray. Place the fillets onto a wire rack that you've set on a cookie sheet. (If you don't have a rack, just place fillets on a foil lined cookie sheet). Drizzle fillets with olive oil. Bake for 15 minutes. Flip, drizzle bottom with oil and bake for 5 more minutes.
If you'd like a sauce for your fish, 1/4 c. greek yogurt with 1/4 c. mayonaise. Add 1 tablespon of dill, 1/2 teaspoon of Old Bay, and 1/2 teaspoon cajun seasoning.

Monday Madess Meal:
This is one of my favorite meals! I fell in love with Big Daddy's bolognese the first time he made it for me and it's one of the dishes he's known for. For those of you unfamiliar with a bolognese sauce, it's a thick meat sauce with lots of finely chopped veggies in the sauce.

New Personal Chef Menu
This week Yes, Chef! will be starting a personal chef service for a new customer and I've got five weeks of menus written and ready to roll. The good news is that if other customers want to hop on board, just give me a couple of days notice and I can make you a lunch or dinner or more! Orders for Monday-Wednesday must be in by Saturday morning and Thursday-Friday Meals need to be ordered by Tuesday to coordinate with my shopping/cooking schedule. Meals are $15 each and are ready to heat and eat.

Monday Madness
For anyone who hasn't heard about Monday Madness, here's the deal: dinner for four delivered free in Collin County $30. Add extra for $7.50 per meal. There are two similar selections, an angel meal which is designed for those who'd like to eat a little lighter and healthier fare and a devil meal complete with freshly baked dessert. While this is called Monday Madness, if you'd like to order the meal for later in the week, I don't mind.
Some of our single customers order our Monday Madness meals and take one for lunch every day. Others buy a meal to send to their parents. Guys, this is a great surprise for the lady in your life to get to put her feet up and relax on a Monday night.
